Our XXX 3 year aged white cheddar is our most popular River Rat Cheddar. It is a mouthwatering triple sharp, triple tangy, white cheddar with a smooth, velvety, and creamy texture. Available in 10 oz, 20 oz. and 40 oz. blocks.

Here are our very own fan favorite serving suggestions:
   - Paired with a seasonally fresh glass of apple cider
   - Paired with a pint of robust brown ale or pale ale
   - Simply slice and serve with crackers, Crogan bologna, and juicy apples
   - Homemade XXX Mac & cheese (2 cups of milk, 2 cups XXX cheddar, 2 cups of pasta, bake until warm and bubbly)
   - XXX Cheddar Cheese Burger (delicious also topped with our Thousand Island Dressing)
   - Melted on a Warm slice of Mom’s apple pie
   - Sliced and melted in a tortilla for a tangy quesadilla
   - The quintenssential grilled cheese sandwich

This 2 lb. New York State White Cheddar Wheel is wrapped in black wax  and is aged for 1 to 2 years to give that perfectly creamy texture.

Your choice mix or match flavors. Sharp Cheddar, Horseradish, Port wine, Jalapeno, and Swiss Almond. (Please ensure total mix and match equals 4).
